Whether you are a restaurateur, coffee shop, hotel, ice cream shop, or fast-food professional, this recipe allows you to easily serve acai in different forms and create an offering suited to your establishment.

Why add guarana to our acai sorbet?

Guarana is a fruit native to the Amazon, just like acai. It has traditionally been consumed in this region and is one of the emblematic ingredients of Amazonian biodiversity.

Combined with acai, it adds a complementary aromatic note that fits naturally into a frozen preparation. The sorbet therefore retains acai’s characteristic profile while offering a recipe that differs from classic acai purée.

This combination also makes it possible to offer an original alternative on a menu, particularly for establishments wishing to renew their frozen recipes and serve acai in a different format.

How do you prepare Nossa! acai and guarana sorbet?

Before making your acai bowl, two preparation methods are possible depending on your equipment and service organization.

Option 1: serving with a scoop

Store the sorbet tubs at -18 °C.

Before service, take the tub out for approximately 5 to 10 minutes to allow the product’s temperature to rise slightly, to around -12 °C. This step produces a softer texture that is easier to work with and suitable for portioning.

Then use an ice cream scoop to form regular balls. This method is particularly suitable for establishments wishing to serve the sorbet in a bowl, dish, plate, or cup.

Option 2: using a soft serve machine

For service with a soft serve machine, completely thaw the preparation in the refrigerator until you obtain a liquid, homogeneous base.

Then mix the contents with a spoon to homogenize the preparation, and pour it directly into the machine’s hopper.

Set the machine to an intermediate consistency to obtain a texture suitable for service and consistent dispensing, at around -3 to -5 °C.

This method helps save time during service and ensures a consistent portion with every preparation.

Important: do not refreeze a thawed preparation.

Preparing the acai bowl base

To make an acai bowl, generously place the  ready-to-serve acai and guarana sorbet in a bowl, using approximately 150 to 200 g per portion, or 3 to 4 scoops of ice cream.

Using a spoon or spatula, smooth the sorbet to evenly cover the bottom of the container. This gives you a consistent base that makes plating easier and allows the toppings to be distributed harmoniously.

For a generous presentation, you can also create a slight texture on the surface of the sorbet before adding the ingredients.

Creating your fresh and delicious acai bowl

Once the base is ready, it is time to assemble the bowl.

For this recipe, add:

  • ½ banana, sliced
  • A few seasonal fruits, such as strawberries
  • 1 tablespoon of peanut butter, drizzled over the top

Arrange the different elements visibly to highlight the colors and textures. Vary the fruits with the seasons to easily refresh the recipe without changing the bowl’s base.

You can also complete the presentation with other toppings according to your menu: granola, nuts, seeds, coconut flakes, fresh fruit, or coulis.

Serving acai and guarana sorbet in different formats

The sorbet’s appeal is not limited to acai bowls. Its texture and ease of portioning make it possible to create several serving formats from the same preparation.

In a cup or on a plate

Simply serve 2 to 3 scoops of sorbet in a cup or on a plate and accompany them with fresh fruit, toppings, or a sauce. This presentation is particularly suitable for a dessert offering or a summer menu.

In an ice cream cup

For a takeaway offering, portion the sorbet directly into an individual ice cream cup. Add a few toppings or offer them separately so customers can customize their dessert.

In a cone

Form one or more scoops of sorbet and serve them in a cone for a simple presentation that is easy to take away. You can also add a topping or sauce to create a more indulgent version.

One base, multiple uses for your menu

With acai and guarana sorbet, you can therefore create several recipes from the same product: acai bowl, plated dessert, ice cream sundae, takeaway cup, or cone.

This versatility allows you to adapt the format, presentation, and toppings to your concept while maintaining a simple and quick preparation process during service.

For an acai bowl, allow approximately 150 to 200 g of sorbet per portion, then adjust the quantities of toppings according to the desired format and your positioning.

Acai and guarana sorbet thus becomes an easy-to-integrate base for di
