How do you make a no-bake cheesecake?⠀
For the base, you will need:
- 70g crushed biscuits (such as Petit Beurre)
- 30g unsalted melted butter.⠀
For the acai cream, use:
- 200mL heavy cream,
- 240g cream cheese,
- 100g Terraçaí organic acai pulp
- 9g powdered gelatin
- 2 tbsp. hot water.⠀
For decoration, add granola and a few blueberries and/or raspberries!

For the base:
- Place the biscuits in a cloth bag (no plastic, please!) and crush them with a rolling pin. Don’t hold back!⠀
- Mix the biscuit crumbs with the melted butter.⠀
- Spread out the mixture, cut it out with a 15 cm diameter pastry ring, and place it in the freezer with the pastry ring for the rest of the recipe.
For the acai cream:
- Beat the cream cheese on its own using an electric mixer, then do the same after adding the thawed acai pulp.⠀
- Add the heavy cream and beat the mixture again.⠀
- After leaving the powdered gelatin in the hot water for 3 minutes, add it to the previous mixture.⠀
- Pour everything over the base you placed in the freezer, and refrigerate the cheesecake for at least three hours.⠀
- Remove the pastry ring. That’s it, the cheesecake is ready!⠀
