Our recipe: Shrimp, Avocado, and Acai Tartare

Prep time: 15 minutes
Serves 2

Ingredients:

  • About 20 peeled pink shrimp
  • 50 g thawed acai
  • 1 small shallot
  • A few sprigs of parsley
  • Juice of 1/2 lime
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • 1 avocado

Preparation:

Prepare the shrimp:

  • Peel and roughly chop the shrimp. Set aside in a bowl.

Add the seasonings:

  • Add the lime juice, olive oil, salt, pepper, and acai. Mix well to coat the shrimp.

Prepare the avocado purée:

  • Mash the avocado with a fork until smooth. Finely chop the shallot and add it to the avocado. Season with salt, pepper, and a splash of lemon juice.

Plating:

  • Using a cookie cutter, start by spreading a layer of mashed avocado. Top with the shrimp tartare.
  • Garnish with fresh parsley and a whole shrimp.
