What could be better than a classic twist to treat yourself and impress your loved ones with this coconut panna cotta and acai coulis recipe? A guaranteed treat!

Ingredients

For two verrines, you will need:

  • 2 cartons (500 ml) of coconut milk
  • 50 g of erythritol or white sugar
  • 2 teaspoons of liquid vanilla extract
  • 1 packet (2 g) of organic agar-agar

For the coulis:

  • 2 pouches of pure acai pulp (thawed)
  • 3 tablespoons of brown sugar
  • 1 tsp organic agar-agar
  • 1 tablespoon of chia seeds (optional)

Preparation

Once you have all these ingredients, here are the steps to follow:

  1. In a saucepan, combine the coconut milk with the vanilla extract and sugar.
  2. Bring to a boil, then add the agar-agar while stirring.
  3. Pour the mixture into individual glasses and let cool. Refrigerate the glasses for at least two hours.

Meanwhile, prepare your açaí sauce. To do this:

  1. In a saucepan, combine the thawed acai pulp with the sugar, agar-agar, and chia seeds (optional).
  2. Cook for a few minutes, stirring frequently. Then let the mixture cool.
  3. Finally, divide the coulis between the two glasses and refrigerate.
