The acai is a fruit native to the Amazon. Its seasonality is closely tied to the rhythm of the forest. In Brazil, the harvest takes place mainly between July and December, a period when the palm trees produce abundant clusters of small purple berries.
It’s important to understand that the acai berry is an extremely delicate fruit. Once picked, it oxidizes very quickly and must be processed into a puree within 24 to 48 hours of harvest. It is this rapid processing that ensures both food safety and the preservation of nutrients.
This also explains why fresh acai isn’t exported as is: to cross borders, it must be frozen immediately after the pulp is prepared. Thanks to this process, the quality is preserved and the fruit remains available year-round in frozen form.
