Recipe for our acai-filled chocolate bar

Prep time: 30 minutes
Makes 2 bars.
Store in a cool place and enjoy within 2 to 3 days.

Ingredients to use:

  • 200 g dark chocolate
  • 40 g white chocolate
  • 2 tablespoons of mascarpone
  • 50g of Terraçaí by Nossa organic and fair-trade acai puree
  • 2 tablespoons of date syrup
  • 20 g pistachios
  • 20 g slivered almonds

Preparation:

  1. Prepare the chocolates:
    Melt the dark chocolate and white chocolate separately in a double boiler or in the microwave, stirring frequently to prevent them from burning.
  2. Make the marbled base:
    First, pour the melted white chocolate into a chocolate bar mold. Immediately add a thin layer of dark chocolate on top. Use a spatula to spread both chocolates across the entire surface to create a marbled effect. Place in the freezer for 15 minutes.
  3. Prepare the filling:
    Combine the mascarpone, acai purée, and date syrup in a bowl. Stir until the mixture is smooth and creamy.
  4. Assembling the bar:
    Remove the chocolate base from the freezer. Spread the filling evenly over the top using a spatula. Sprinkle with pistachios and slivered almonds for added crunch and flavor.
  5. Finish the bar:
    Coat with the remaining melted dark chocolate, smoothing the surface thoroughly. Return to the refrigerator to set.
  6. Enjoy it yourself or give it as a gift:
    Once cooled, remove the bar from the mold. Wrap it in kraft paper or reusable bags for gourmet and eco-friendly gifts.
