Acai cheesecake: a no-bake treat
No-bake cheesecakes are a real godsend for anyone who loves quick and easy desserts.
Their main feature is that they don’t require baking, which makes them especially appealing on hot summer days or when time is short. In addition to being easy to make, this no-bake version offers a creamy texture and a delicious flavor that everyone will love!
Unlike traditional cheesecakes, which often require a long and delicate baking process, no-bake cheesecakes eliminate this step entirely.
All it takes is a few simple ingredients and a little preparation to create a delicious treat that’s ready to enjoy in no time.
Whether you're in a hurry, trying to avoid the heat of the oven, or simply looking for a quick and delicious alternative, these acai cheesecakes are the perfect way to satisfy your sweet tooth without any hassle.
Get ready to try this irresistible recipe, where simplicity meets indulgence.
How do you make a no-bake cheesecake?⠀
For the base, you will need:
- 70 g of crumbled cookies (such as Petit Beurre)
- 30 g of melted unsalted butter.⠀
For the acai cream, you will need:
- 200 mL heavy cream,
- 240 g of cream cheese,
- 100 g of Terraçaí organic acai pulp
- 9 g of powdered gelatin
- 2 tablespoons of hot water.⠀
For garnish, add some granola and a few blueberries and/or raspberries!
And now, follow the guide!
For the base:
- Put the cookies in a cloth bag (no plastic, okay!) and crush them with a rolling pin. Go ahead and really give it a good whack!⠀
- Mix the cookie crumbs with the melted butter.⠀
- Roll out the dough, cut it out using a 15-cm-diameter cookie cutter, and place it—along with the cookie cutter—in the freezer while you continue with the rest of the recipe.
For the acai cream:
- Beat the cream cheese on its own using an electric mixer, then repeat the process after adding the thawed acai pulp.⠀
- Add the heavy cream and beat the mixture again.⠀
- After soaking the gelatin powder in hot water for 3 minutes, add it to the previous mixture.⠀
- Pour the mixture over the crust you had placed in the freezer, and refrigerate the cheesecake for at least three hours.⠀
- Remove the springform pan. That's it—the cheesecake is ready!⠀

Equipment and tips for removing from the mold
To make a no-bake cheesecake with a clean, elegant finish, use a springform pan or a dessert ring. Line the sides with a strip of plastic wrap. This clear food-grade plastic wrap makes it easy to remove the cake from the pan and keeps the edges perfectly smooth.
If you prefer individual portions, use muffin tins lined with paper cups. This format is more convenient for serving and perfect for cocktail parties or brunches.
Preparation tips
The secret to a firm cheesecake? Cold temperatures and patience. Always use very cold ingredients, especially the heavy cream, so it whips up properly.
After assembling the crust and filling, let it set in the refrigerator for at least 4 to 6 hours. Overnight is even better.
Frequently Asked Questions About the No-Bake Cheesecake Recipe
Why isn't my whipped cream forming peaks?
There are several possible reasons for this:
- Your heavy cream wasn't cold enough (it should be taken out of the refrigerator just before whipping).
- The fat content is too low: choose a cream with at least 30% fat.
- You've whipped it for too long, and the cream has started to curdle. In that case, you'll need to start over with fresh cream.
Can gelatin be substituted?
Yes! You can use agar-agar (use about 2 g per 500 ml of mixture), which should be dissolved in a liquid brought to a boil before adding it to the mixture.
