Ingredients needed

  • 50 ml of acai (thawed)

  • Frozen or fresh blueberries (in season, from July to September)

Preparation steps

Making the crepe batter:

  1. Combine the flour and sugar in a large bowl.
  2. Make a well in the center, then add the eggs and olive oil.
  3. Gradually add the milk while whisking to prevent lumps from forming.
  4. Add acai for a vibrant color and a fruity flavor.
  5. Let the batter rest for 30 minutes for even fluffier pancakes.

How to cook pancakes: 

  1. Heat a lightly oiled skillet.
  2. Pour a ladleful of batter, spread it evenly, and cook until the pancake comes away easily.
  3. Flip it over to brown the other side.
  4. Set the cooked crepes aside on a plate, covered with aluminum foil, to keep them warm.

Preparation of the spread:

  1. Melt a bar of white chocolate in a double boiler.
  2. Divide the melted chocolate between two bowls. Add 50 ml of acai to one of the bowls and mix well.

  1. Spread the white chocolate-acai spread over half of a crepe.
  2. Fold the crepe in half and drizzle it with a little plain white chocolate.
