Recipe for Raspberry and Acai Mousse with Silken Tofu (serves 2)

Mix the ingredients

Place the silken tofu, raspberries, acai puree, and agave syrup in a blender.
Blend until smooth and creamy.

Pour into small glasses

Divide the mixture between two ramekins or small glasses. The mixture will be runny at this stage; this is normal.

Let the mousse set

Refrigerate for at least 1 hour to allow the mousse to set and thicken. Ideally, let it chill overnight.

The longer it rests, the firmer and fluffier the texture becomes, thanks to the natural properties of silken tofu.
